The olive tree is one of the oldest traditional crops of Europe. Its origins date back to ancient Mesopotamia.
The size of the olives depend on the variety but typically range in between 1.5 and 3 centimetres. The olives are green coloured in its infancy and become black as they mature.
The time of the year where the harvesting takes place depends on the variety but it takes place normally in between November and February. The extraction of the oil is carefully controlled and the processes used allow us to prevent the alteration of fatty acids and minimised the increase in acidity.
Ecological olive grove
The plantation of ecological olive trees is done using the espalier method. This method facilitates the mechanisation of olives harvest and enables to increase the productivity of the cultivation while being completely environmentally-friendly. This approach takes care of the land for continuous growth year after year.

The processes used in the growth our olives are environmentally-friendly and takes into consideration the impact of its olive groves plantation. To achieve it we have eliminated the use of chemical products during the whole life cycle of the plant. For instance, chemical fertilizers have been replaced by organic ones, pesticides and insecticides by natural and ecological elements and barriers and herbicides have been replaced by manual or mechanical weeding.
Our ecological farming is certified by the Committee for Ecological farming from Valencia region, which guarantee The quality of production processes.
